Our scrumptious long lunch along the Salt Road at the restaurant Primula Bianca!

Let us take you on a virtual culinary journey to La Primula Bianca in Castellaro di Varzi. After working up an appetite on our 4-hour walk along the famous Salt Road or Via del Sale, we arrive at our destination, La Primula Bianca. This charming restaurant offers more than just a meal—it’s an experience steeped in history and flavour. Picture yourself strolling along a panoramic pathway from Varzi to Portofino, a route that traces back to the Middle Ages. As you approach La Primula Bianca, the air is fragrant with anticipation.

The Tasting Menu (Menu Degustazione) is a delightful adventure for your taste buds. Imagine a non-stop parade of eight starters, each representing a small masterpiece. These tantalizing bites set the stage for what’s to come. Next, three first courses arrive, showcasing the best of local ingredients. Roast beef follows, tender and succulent, while dessert brings a sweet finale.

Now let’s talk about those ingredients. Varzi is renowned for its salame, considered the finest in Italy. The hills surrounding Castellaro yield wild mushrooms, especially the legendary ‘porcini,’ and truffles—both stars of the Tasting Menu. Patrons find themselves immersed in this exquisite culinary heritage, delivered with flare and pride by the Pollini family and staff. The atmosphere at Primula Bianca is warm and welcoming. Even though the quality of food rivals top London restaurants, there is no pretension here. Instead, there’s a lovely sense of conviviality amongst the patrons as an excited buzz can be heard in the restaurant as each plate is delivered.

And the wine? An excellent selection of Italy’s finest awaits you. We enjoy the local wines of Bonarda and Barbera as they pair beautifully with these dishes.

Desserts at Primula Bianca: molten cake, berry-topped gelato, and olive oil ice cream.

So, whether you’re a seasoned foodie or a curious traveller, La Primula Bianca beckons.
